Born and raised in Kingsport, Tennessee, my family came to this area before 1800 when it was the far western frontier. I learned cooking at the skirt tail of my mother, a finer Southern cook you'd never find! I had the privilege of taking Chinese cooking classes and then learning to cook in a Chinese restaurant under a master chef almost twenty years ago. This has given me a real educational opportunity that few Westerners get in Chinese food preparation. I pretty much subscribe to the Gordon Ramsay school of thought when it comes to restaurants. Most restaurants failures are the result of clueless owners that don't think through all of the possible details that impact a restaurant's success or failure. My critiques may seen harsh to some but after being involved with the business for so many years, the truth needs to be exposed. Neglecting details can be disastrous to a restaurant owner's often very large investment and also puts a number of people out of work when it fails. I hate to see people fail.
